The Best King Cake

OMG I just had the best King Cake in the world.

Resa has been after me to go to Divine Donuts here in Bayou Vista for one of their king cakes. I finally stopped by today.

While there I also bought the Eclair King Cake. It was pure heaven. I had to stop myself from pigging out on the whole thing.

Yes I did save a piece for Resa but I don’t think it will make it to the morning. I foresee a workout tonight but it will be so worth it.

Loaded Baked Potato Soup Recipe

12 large potatoes, baked with skin on

1/2 gallon milk

1 pound shredded cheddar cheese

1 – 16 oz container sour cream

3 teaspoons Beazell’s Cajun Seasoning

1 teaspoon garlic powder

1 stick butter

3 heaping tablespoons flour

In a large soup pot mash baked potatoes while they are still hot. Add milk, Beazell’s and garlic, stir. In microwave melt butter. Add flour and a dash of Beazell’s Cajun Seasoning to melted butter to make a quick roux. Stir roux into milk and potatoes. Simmer for 10 minutes. Add sour cream and cheese. Stir well. Simmer for another 20 minutes. Taste test and season accordingly. If the soup is not thick enough you can make another small roux and add or you can also add a little cream cheese to thicken. Just remember that the next day the soup is better but also thicker so be careful on making it too thick. The next day if the soup is too thick just add a little more milk.

Chili Recipe

2 pounds ground meat

2 packages McCormick Original Chili Seasoning

4 – 8 oz cans of Tomato Sauce

2 teaspoons Beazell’s Cajun Seasoning

Brown ground meat with 1 teaspoon of Beazell’s Cajun Seasoning. Drain fat if needed. Add the remaining Beazell’s Cajun Seasoning, tomato sauce and McCormick Chili Seasoning. Rinse the tomato sauce cans with a splash of water and add to chili. Simmer for 20 minutes.

Top with shredded cheddar cheese and enjoy

Shrimp, Crab or Crawfish Etouffee Recipe

2 tablespoons margarine or butter
1 chopped onion
1/2 chopped bell pepper
2 cans — (10 3/4-oz each) condensed cream of mushroom soup
1 can — (10 3/4-oz) cream of celery
2 cans — (8-oz) tomato soup
3 teaspoons Beazell’s Cajun Seasoning
1 1/2 pounds shrimp, crawfish or crab
A dash or two of tabasco, depending on taste

hot boiled long grain rice

Saute onions and bell pepper in margarine or butter until tender. Add cream of
mushroom, tomato and celery soups, and Beazell’s Cajun Seasoning. Simmer 15 min
utes, stirring often. Rinse shrimp in very hot water to break apart, drain and
add to sauce. Simmer until shrimp are tender, approximately 10-15 minutes.

over hot rice.

I also like to take my leftover boiled crab and add the cleaned bodies to the etouffee sauce. You can also pick the crabmeat from the crabs and add to the etouffee sauce.

This is a no fail recipe that I have prepared over and over for my family. It is very good and quick to make

A friend got us hooked on it and it is the only seasoning used in our house now. I highly recommend this to all of our friends and family.

Beazell’s is not like other “cajun” seasonings that you can find, it’s the best, in my opinion. There is no MSG, it is NOT too salty or peppery, it is perfect. Once you try it you will be hooked as well, IT’S THAT GOOD!

Our Vacation at Great Wolf Lodge in Grapevine, Texas

We brought Resa to her favorite place before school started back for the New Year. For anyone who has children I highly recommend this place. It has a great family atmosphere – something for everyone in the family to do. The staff is very friendly as well as helpful.

This is one of the few places we have been where you never have to leave for anything. Food, entertainment and lodging is all right there.

Mat and I can sit back on one of the lounge chairs while Resa plays in the indoor waterpark. There is also an arcade and an interactive game called MagiQuest that the children can enjoy.

Resa didn’t come to the room until 11 p.m. the first night and crashed as soon as her head hit the pillow. She was up at 9 a.m. and played in the park until noon. This made our 5th visit to the park, with no complaints on any visit.

Of course what I like is that they have a Starbucks. Great Wolf is also one of the few places that I can go and enjoy myself without worrying about my MS. With everything being self-contained there is not a lot of walking which makes it so much easier on me.

The ticket price to the waterpark is included in the room rate. There are several floor plans to meet your family’s needs.

Multiple Sclerosis and the Flu – A Bad Combination

I am ready to admit defeat right now.  The vacation took a lot out of me even though it was nice to get away from the house for a bit.  The day after we get home though I come down with the flu.  This is the 3rd day I have been in bed with a high fever and flu symptoms.

It seems as if everytime I get sick it throws my MS into a tailspin.  As soon as I can I will post pictures of our vacation at Great Wolf Lodge.

A Kiss So Deadly

“A Kiss So Deadly” is not only my first true paranormal romance but it is a book that holds a special place in my heart.

My parents and I worked on this book to make sure the little details were correct. My dad’s family did have a plantation home for many generations. I actually have a dresser that was built from some of the wood in that plantation home. This particular dresser was handmade as a wedding gift from my dad.

During the late 1800’s a murder did occur on the plantation grounds.

The haunted plantation I write about in the book existed as well. It was a family home for an aunt’s husband. Several times when we would visit my aunt you could find the piano mysteriously playing.

A presence could be felt in the house but it was never one that caused you to fear it.

My in laws worked with me on the historical facts. My husband’s family made their way to Louisiana by Nova Scotia. I had wanted to include the plight that the Cajuns went through to get here. It was my no means a pleasant experience. Some were torn from their loved ones while in Nova Scotia and forced to leave their homes that they had worked hard to build.
