Roasted Tomatoes with Goat Cheese Recipe

When my husband and I go out to Carrabba’s we get something simliar to this. It is so good that I had to come up with a version to eat at the house.

Preheat over to 400 degrees. Place 3 cups of cherry tomatoes with 1 glove of garlic peeled in a shallow baking dish. Drizzle with olive oil and season with Beazell’s Cajun Seasoning.

After 12 minutes turn tomatoes. Cook until tomatoes start to burst but garlic does not brown.

Place tomatoes in a bowl, add 1 tablespoon fresh oregano, fresh basil and parsley. Mash tomatoes and seasonings slightly. Add 8 oz goat cheese and mix with tomatoes.

Serve warm with sliced French bread, garlic rounds or crackers.
