Crawfish Cornbread Recipe

Now that we are back home and have an internet connection I thought I would share one of the recipes my father in law likes.

2 cups yellow cornmeal

1 teaspoon baking soda

6 eggs

1 medium onion

16 ounces cheddar cheese

2/3 cup oil

2 (16 oz) cans cream style corn

2 pounds crawfish tails, rinsed

1 tsp Beazell’s Cajun Seasoning

Preheat oven to 375

In a large mixing bowl combine cornmeal, baking soda and Beazell’s

Chop onion and grate cheese.

Beat eggs and add onions, cheese, oil, cornmeal mixture and crawfish tails

Mix well

Pour into greased 12×14

Bake at 375 for 55 minutes or until golden brown


I prefer not to make mine spicy but you can add a jalapeno or two chopped and added to the batter.
