Lemon Bar Recipe

This is one of my husband’s favorite recipes….

2 cups sifted all purpose flour

1/2 cup sifted confectioner’s sugar

2 sticks (1 cup) butter

4 eggs, beaten

2 cups sgar

1/2 cup fresh lemon juice

1/4 cup all purpose flour

2 teaspoons baking powder

Sift together flour and confectioner’s sugar.  Cut in butter.  (Note:  I prefer to do this part in the food processor or kitchen aid mixer.)

Press into a 13x9x2 baking pan and bake for 20 minutes in a 350 F degree oven.  Beat the eggs, sugar and lemon juice together.  Add the flour and baking powder. Pour over the baked crust and return to the oven for an additional 20 minutes.

 

Cool before serving.
