A big shout out to 104.9 and the awesome music they are playing this morning.
It is making the long drive to Baton Rouge much more enjoyable this morning.
White Sausage Gravy
Brown 1 package Jimmy Dean Sausage
Once sausage is browned add 1/2 cup all purpose flour (if there is excessive grease drain some off – you will need some grease to mix with flour for a roux).
Incorporate flour and sausage. Add 2 cups milk. Stir well until mixture is well incorporated.
Cook over medium heat. Watch closely. If too thick add more milk.
Season with Beazell’s Cajun Seasoning to taste
Serve over hot biscuits
Smoked Turkey Sandwich Recipe
I am totally addicted to this smoked turkey sandwich.
Cut open one croissant.
Spread no sugar added apricot spread (can be found at Rouse’s supermarket as well as Whole Foods) on croissant.
Add smoked turkey and Brie.
Place on sandwich/panini press and let Brie melt.

Landry’s Seafood In Jeanerette, LA
So I stopped by and picked up a Shrimp PoBoy at Landry’s Seafood. It so hit the spot.
As a side to the poboy there was a bag of fresh potato chips. OMG if you ever go to this restaurant it is a must try.
Mat’s Anniversary Gift – Belated
So Mat had asked for a Dodge Diesel for his anniversary. I had already started working on his gift.
It came out gorgeous. David at Jewelry Design and Repair did a fabulous job in helping to create this Masterpiece.
This ring also signifies his life’s journey. I tool several of the rings he no longer wears and melted down. This included his class ring, his Uncle Doo’s wedding and black onyx ring, my original wedding band, and one of the first rings I purchased him after we were married.
MaMa’s Yam Streusel Recipe
3 cups sweet potatoes
1/2 cup butter
1/2 cup sugar
2 eggs, beaten
1/3 cup milk
Topping
1/3 cup melted butter
1/2 cup flour
1 cup brown sugar
1/2 cup chopped pecans
Boil and mash sweet potatoes. Add remaining ingredients. and pour in 13×9 baking dish
For Topping: Melt butter. Mi remaining ingredients in melted butter. sprinkle on top of sweet potatoes
Bake at 400 F for 20 minutes or until topping is browned
Salmon Dip Recipe
So Mat and I came up with this recipe when we had a LOT of leftover salmon.
8 oz smoked salmon, chopped
1/3 cup mayo
2 T chopped parsley
2 teaspoons lemon juice
Beazell’s Cajun Seasoning
1/3 cup shredded cheddar cheee
Mix ingredients together and chill. Serve with crackers or garlic rounds
(Another variation is to add cream cheese instead of mayo. I personally am not a fan of mayo and like it better with cream cheese.)
