One of my fondest memories growing up is going to MaMa Griffin’s house and peeking under the old cake cover to see if there was any breakfast cake left.
This recipe was a staple at our house as well as hers. Now it is one of my daughter’s favorite breakfast foods as well.
This is a very special recipe that I am sharing with you.
Breakfast Cake
4 T melted butter
1 egg slightly beaten
1/2 cup milk
1 cup flour, sifted
1/2 cup sugar
3 tsp baking powder
Heat oven to 375 degrees. Melt butter, cool slightly. Add milk and egg. Stir in dry ingredients only long enough to remove lumps.
Pour into greased 8×8 square pan. Bake 10-15 minutes.
