Resa has been begging for pancakes. Decided to share my recipe with everyone this morning
2 eggs – well beaten
2 cups buttermilk
1/4 cup melted butter
1 3/4 cup self rising flour
2 T sugar
1/2 tsp baking soda
Heat a griddle to 425 degrees
Mix eggs and buttermilk. Add melted butter. Whisk in dry ingredients.
I let the batter rest for a few minutes before pouring pancake batter onto the hot griddle.
Pour a ladle full of pancake batter on hot griddle pan. Do not flip until golden brown and bubbly. Flip only once. When other side is nice and golden brown remove.
This does make a large batch of pancakes. You can add chocolate chips or blueberries to the batter.
As far as the self rising flour goes I remember MaMa Griffin always using self rising flour when baking so several of my recipes call for it. I always have both on hand.
One of my fondest childhood memories is waking up for school to smell pancakes cooking. I try to cook breakfast for my family as often as I can although it is a madhouse here most mornings.
I am one of those that even wakes up with my husband and sends him off to work with breakfast.
