Recipes

For those wondering, I decided to be nice and share some of my favorite recipes. I am hoping the measurements are correct. I do not normally measure, just mix in bowl.

I will try to post a new recipe at least once a week. If there is a specific recipe you would like please let me know.

Be forewarned that I bake. I rarely cook. That is my husband’s department.

Chocolate Chess Pie

If you love licking the bowl of the brownie batter you will love this chocolate pie recipe. My son can eat a whole pie on his own.

1 stick butter

3 T cocoa

2 eggs

3/4 cup sugar (if you like it really sweet you can add 1 1/2 cups)

1 small can Pet milk

1 tsp vanilla

Melt butter and cocoa. Add sugar, mix well. Add eggs, beating well. Add pet milk and vanilla, stir well. Pour into deep dish pie shell immediately or it will separate.

Bake at 325 degrees for 45 minutes.

Bread Pudding Recipe

This is for everyone that has been asking for my bread pudding recipe.

1 quart milk

up to 2 cups sugar (if using doughnuts then no sugar needed)

3 eggs

2 Tablespoons vanilla

1 to 2 packages french bread (you can also use leftover bread, doughnuts, etc.)

Melt 3T butter in 9×13 pan (or 2 quart casserole dish).

Break the bread into tiny pieces and soak in milk until soggy. Add sugar, eggs and vanilla. Stir well.

Bake at 350 degrees for 1 hour or until firm.

(I have used leftover cream cheese danish, chocolate glazed doughnuts, croissants, biscuits – whatever I have lying around the house. The sweeter the bread the less sugar you use. Also, if you need to use an extra cup or two of milk to bread add an extra egg or two as well. After I start adding the milk I watch to see if the bread is “soaking” up all the milk. The staler the bread the more milk you may need. I let the bread soak a while too, my family does not care for a dryer bread pudding.)

For the Sauce:

Melt 1/2 cup butter in a double boiler. Once melted add 1 cup sugar and stir well. Once sugar has melted add a small can pet milk that has been whisked with an egg yolk. Stir well. Once thickened add a shot of Disaronno or Makers Mark. (sometimes i use two shots)

The Traveler

I’m so excited that The Traveler, my second book will soon be published.

I have tried writing several times today, but someone must have slipped my youngest a pure sugar pill.  She woke up with me this morning (5 a.m.) and has been going strong since she woke up.

Hopefully she will go to bed at a decent hour (and I’m not too tired) so that I can try and write. I am halfway done with book 6 and already started on Book 7.  When I get writer’s block on one book I switch to the other. Something new I am trying, but it is working.

 

The Traveler

School

Another school year is upon us. It seems as if the summer was too short this year or maybe it’s just because I’m not ready for school to start.

I’m having to realize my little girl may not be so little anymore. This is her last year of elementary school. She is all excited about going to Jr High next year and I’m wishing she was back in first grade.

Kids grow up too fast. It seems like only yesterday she was a little baby.

Writing

I couldn’t seem to get in a writing mood this morning. I just had way too many ideas floating around. So I decided to try something new and started writing on all the books I had ideas on, winging it as I went. I can always go back later and work on the flow of the books.

This may have been just what I needed because all of a sudden book 6 starts to really flow. I’m really getting a lot achieved when my computer shuts down on me. Grr, for some reason it decides to do the updates now instead of in the middle of the night.

Now I have to find my groove again.
